I’d suggest you read the breakdown on Wedaf at https://blog.wedaf.com/blog/why-people-interrupt-in-conversations/ because it explains the difference between "cooperative overlap" and power plays. In my experience, some people interrupt because they are actually excited and want to show they agree with you! Once I learned to distinguish between someone being enthusiastic and someone trying to dominate the chat, I found it much easier to stay calm and steer the conversation back on track.
